Grease Traps

What is everyone installing for grease traps - under sink, small outdoor, large buried?

We are installing a 1,000 gallon concrete trap at a restaurant, is anyone else doing anything like this? Do any states require larger grease traps?

As a precaster we are selling 1,000 gal. traps to our contractors. Since we started selling more grease traps I am finding that eateries are putting them in alot of different styles and configurations. Ours obviously are in ground units. I have heard some regulators push for 2,000 gal tanks, but they are few and far between.
